Irish Expression of the MonthI’ll admit it… I love Irish food.Something about simple, hearty country meals - well prepared - keeps me coming back to Irish recipes again and again. We served a lovely Shepherd’s Pie for St Patricks Day this year, and it was a big hit! My kids were so in love with the mashed potatoes, tender meat and savory beef gravy, that they didn’t seem to notice they were getting their vegetables (carrots, peas, onions) at the same time! So ‘score one’ for Dad! With all that in mind, our Irish expression of the month is – drum roll please – If you have never tried this classic dish, you are in for a treat!
