Bursting with Irish Flavor!

Here is an authentic Dublin Coddle recipe: a uniquely Irish dish full of Irish flavors and charm.  Easy to make, satisfying to eat, preparing this recipe is a terrific way to express your Irish side wherever you are in the world!

Below you will find one of our favorite approaches to this delicious meal.  But the truth is, you can make it with almost anything you find in your refrigerator.

Authentic Dublin Coddle Recipe: Ingredients

The ingredients for this authentic Dublin coddle recipe are simple and more than likely take up space in your kitchen already!

  • 1 cup good quality beef or vegetable stock
  • 6 medium potatoes
  • 8 ounces of bacon
  • 1 lb sausages
  • 2 medium onions
  • pepper
  • salt

Authentic Dublin Coddle Recipe: Preparation

Here are 12 easy steps to prepare Dublin Coddle:

  1. Slice the bacon into 1-inch pieces.  Do the same with the sausages
  2. Peel the potatoes and slice them into thick pieces.
  3. Skin and slice the onions.
  4. Heat up the stock to a boil using a medium saucepan that has a lid that fits tightly
  5. Add the bacon and sausages to the oil and return to a boil
  6. Turn to simmer for approximately 5 minutes.
  7. Remove the bacon and sausages and save any liquid. 
  8. In a greased saucepan place one layer of potatoes, one layer of onions, and half of the bacon and sausages on the next layer. 
  9. Repeat step 8 and make the very top layer another layer of potatoes.
  10. Drizzle remaining stock over the top, then add salt and pepper to taste. 
  11. Place the cover on the pan and turn down to simmer for approximately one hour.
  12. Serve and enjoy!
