Irish Cream Cheesecake: An Irish Twist on a Delicious Global Delicacy!

The uniquely Irish flavor in Irish cream cheesecake is - you guessed it! - Bailey's Irish cream. While there are many variations to this dessert, the core recipe is simple and easy to make at home.

Irish Cream Cheesecake:  Ingredients

For the Crust

  • ¼ cup of granulated sugar
  • 1 ¼ cup almonds
  • 10 crushed graham crackers
  • ¾ stick of butter

For the Filling

  • 1/3 cup of Bailey’s Irish Cream
  • ½ lb of cream cheese, room temperature
  • 3 ounces of white chocolate
  • 3 eggs
  • ¾ cup of sugar
  • 1 tsp vanilla extract

For the Topping

  • 1.5 ounces of grated white chocolate
  • 1 ½ cup of sour cream
  • ¼ cup of powdered sugar
  • Slivered or grated almonds to sprinkle on top

Irish Cream Cheesecake:  Preparation

Start with the Crust

  • Preheat the oven to 325 degrees.
  • Butter a 9-inch springform pan.
  • Use a food processor to grind sugar, crackers and almonds. Add melted butter and blend together. Press crush into the bottom of the pan, then allow to refrigerate for 20-25 minutes.

Then the Filling

  • Use a mixer to beat sugar and cream cheese together in a large bowl until mixture is smooth.
  • In a small bowl, whisk together vanilla, eggs and Bailey’s Irish Cream, just until lightly blended. Beat cream cheese and egg mixture together.
  • In food processor, chop white chocolate finely. Fold chocolate into the filling. Then, carefully transfer the cream cheese filling into the pan on top of the crust.
  • Bake at 325 until the center is set and the edges of the filling puff up – approximately 50 minutes.
  • Remove from oven and cool on a wire rack.

Finally the Topping

Once the cheesecake has cooled, mix together powdered sugar and sour cream in a small bowl. Spread on the top of the cheesecake.

Allow to refrigerate for approximately six hours. Before serving, sprinkle the almonds and grated white chocolate on top as an edible garnish.

A Few Variations You Can Try

Of course, you can have a bit of fun with your Irish cream cheesecake by trying a few variations and fun serving suggestions.

One great idea is to substitute dark chocolate for white chocolate in the cream cheese filling, adding a rich chocolate flavor to the Irish cream.

Or consider a mind-flavored sauce or frosting in the shapes of Ireland...

For a different crust, consider using chocolate cookies or cinnamon graham crackers instead of the traditional graham crackers. You may also want to use walnuts or some other type of nut.

A vegetable peeler or small knife can also be used to create chocolate curls, instead of grating the chocolate for the garnish.
